According to the reports, this issue isn't resolved by the Android 8.1 update, and it occurs with a number of different headphone brands (and on both the Pixel 2 and 2 XL).

Bluetooth issues plagued the last Pixel devices — and its a system that causes trouble on many other electronics products too — but it doesn't seem like something that's going to be too hard to address. Both the Google Assistant and Bluetooth headphones function properly independently of each other, so it's unlikely that it can't be fixed with an over-the-air update.
