For now, the only workaround to the bug is to set up the remote unlock feature before restarting the device and then use the Find My Mobile app to delete all biometrics and screen lock data. The only issue is that you still won’t be able to enroll new screen lock or biometrics so the device will remain without any form of secure unlock.
There’s also the hard reset option that wipes all the phone’s data but some users are reporting that even after that, they still cannot set
